Ingredients

For Rasgulla Balls

  • 1 litre full-fat milk

  • 2 tbsp lemon juice or vinegar

  • 4 cups water

  • 2–3 crushed cardamom pods

  • Few saffron strands (optional)


Step-by-Step Recipe

1. Make the Chhena (Paneer)

  1. Bring the milk to a boil in a large pot.

  2. Lower the flame and slowly add lemon juice while stirring.

  3. The milk will curdle and separate into curds and whey.

  4. Strain the curds using a muslin cloth.

  5. Rinse under cold water to remove the lemon flavor.

  6. Squeeze out excess water and let it rest for 30 minutes.


2. Knead the Dough

  1. Transfer the chhena to a plate.

  2. Knead gently for 8–10 minutes until smooth.

  3. Add cornflour if the mixture feels crumbly.

  4. Make small smooth balls without cracks.


3. Prepare the Syrup

  1. In a wide pot, bring 4 cups water to a boil.

  2. Add Good Sugar Monk Fruit Sweetener.

  3. Add cardamom and saffron.

  4. Let it simmer for 3–4 minutes.


4. Cook the Rasgullas

  1. Drop the balls gently into the boiling syrup.

  2. Cover and cook on medium heat for 12–15 minutes.

  3. The rasgullas will expand and become soft and spongy.


5. Cool and Serve

Let the rasgullas cool in the syrup for at least 1 hour before serving.
