Sugar-Free Kheer Recipe Using Good Sugar Monk Fruit Sweetener

Sugar-Free Kheer (Healthy Indian Rice Pudding)

Kheer is one of the oldest and most loved Indian desserts. Traditionally prepared with rice, milk, and sugar, it is often served during festivals, celebrations, and family meals.

In this recipe, we replace regular sugar with Good Sugar Monk Fruit Sweetener, allowing you to enjoy the same creamy sweetness while reducing refined sugar intake.

The result is a smooth, aromatic, and naturally sweet kheer that tastes just as indulgent as the traditional version.

Ingredients

  • 1 litre full-fat milk

  • ¼ cup basmati rice

  • ¼ cup Good Sugar Monk Fruit Sweetener (adjust to taste)

  • 6–8 almonds (chopped)

  • 6–8 pistachios (chopped)

  • ½ tsp cardamom powder

  • Few saffron strands (optional)

  • 1 tbsp raisins (optional)

Step-by-Step Instructions

Step 1: Wash and Soak the Rice

  1. Rinse the basmati rice under running water until the water runs clear.

  2. Soak the rice in water for 20–30 minutes.

Soaking helps the rice cook faster and gives the kheer a smoother texture.

After soaking, drain the rice completely.

Step 2: Boil the Milk

  1. Pour 1 litre full-fat milk into a heavy-bottom saucepan.

  2. Bring the milk to a gentle boil over medium heat.

  3. Stir occasionally to prevent the milk from sticking to the bottom.

Using a heavy-bottom pan helps prevent burning and improves the texture.

Step 3: Cook the Rice

  1. Add the soaked rice to the boiling milk.

  2. Reduce the heat to low to medium.

  3. Cook the rice while stirring occasionally.

Continue cooking for 20–25 minutes until:

  • The rice becomes soft

  • The milk thickens slightly

During this stage, scrape the cream from the sides of the pan and mix it back into the kheer. This gives the dessert a rich and creamy texture.

Step 4: Add Good Sugar Monk Fruit Sweetener

  1. Once the rice is fully cooked and the kheer begins to thicken, add Good Sugar Monk Fruit Sweetener.

  2. Stir well until it dissolves completely.

Because monk fruit sweetener dissolves easily, it blends smoothly into the kheer without affecting texture.

Step 5: Add Flavor and Garnish

Now add the flavoring ingredients:

  • Cardamom powder

  • Saffron strands

  • Chopped almonds and pistachios

  • Raisins (optional)

Simmer for another 3–5 minutes so the flavors infuse into the kheer.

Step 6: Adjust Consistency

Kheer thickens as it cools.

If it becomes too thick, you can add a few tablespoons of warm milk and stir until the desired consistency is reached.

Serving Suggestions

Kheer can be served warm or chilled depending on preference.

For extra flavor, garnish with:

  • Additional chopped pistachios

  • Saffron strands

  • Rose petals

This dessert pairs beautifully with festive meals or can be enjoyed as a comforting after-dinner treat.
